Handcrafted breads, pastries & groceries on SW Higgins Ave.
Our Story
Gabriel Nelson has been a quiet fixture on SW Higgins Ave since day one — a place where bread is made the way it should be: slowly, by hand, with ingredients you can trust.
We bake small batches throughout the day so everything that leaves our kitchen is fresh. Sourdough, croissants, focaccia, seasonal pastries — each item is shaped by hand and finished with care.
Our grocery corner carries local Montana staples and carefully selected pantry essentials, because a good meal starts with good ingredients.

What We Make
Sourdough, country loaves, focaccia, and seasonal varieties — all leavened naturally and baked fresh each morning.
Croissants, danishes, tarts and seasonal fruit galettes — laminated and shaped by hand, every single day.
A curated selection of local Montana staples, pantry essentials, and everyday goods — chosen with intention.
Birthdays, weddings, quiet Sundays — order a cake made to your taste. We bake it fresh and finish it simply.
Good coffee, properly pulled — the kind of cup that makes a morning pause worth it. Paired with whatever's fresh.
We follow the seasons here — summer berry tarts, winter spice loaves, spring asparagus focaccia. Ask what's new.
Our Approach
We believe the best bread doesn't need shortcuts. Our sourdough ferments for 24 hours. Our croissants are laminated by hand. Our recipes change with the seasons and the harvest.
When we say we bake from scratch, we mean it literally — flour, water, salt, time. Whatever else enters our kitchen is chosen deliberately and sourced close to home.
Simple ingredients.
Real process.
